Last year Norwegian seafood exports totalled NOK 91.64 billion, 23 per cent up on 2015 and a record for the country. The fish industry is thus becoming increasingly important for Norway. Experts do not see an end to the salmon boom either. Salmon is a popular menu fish for a variety of reasons. It is high in Omega-3 fatty acids and thus healthy; it is boneless and easy to process; it is benefiting from the sushi trend, and salmon farming ensures it is available all year round. The Oslo-based company Marine Harvest is the world's largest salmon producer.
